Rosemary crackers

Crackers are honestly my favourite thing to make. Partly because they are delicious, but also because they are the simplest thing in the world (and they always seem to impress people). Like who thinks to bake crackers?! I often bring them to potlucks and give them to neighbours for Christmas (along with a nice block of smoked cheddar!).

Ingredients:

  • 1 3/4 cups flour
  • 1 tablespoon (or more) chopped rosemary (I usually use dried, but imagine fresh would be glorious!)
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt (sea salt is best!)
  • 1/2 cup water
  • 1/3 cup olive oil
  • Yup, that’s it!

How to make them:

Oven temperature: 450F

  • Like most recipes.. mix the dry, then add the oil and water.
  • Mix/kneed (using your hands is easiest). You don’t kneed it that much. Really isn’t necessary. It turns into a weird texture, but is always perfect.
  • Pull into sections and start rolling the dough (with flour on the surface).
  • The key to this, is to roll small portions at a time and get the dough as thin as possible. Even when you think it is too thin, it probably is not. Super thin makes crispy crackers and thicker makes more thicker pita style crackers (both are great!).
  • I use a pizza cutter to then cut the rolled dough. This is the fun part. Any shapes will do! Large and small cuts cook pretty much the same.
  • You don’t need to put anything down on the baking sheet. Just the dough. The crackers also don’t expand (just rise a little) – so you can place them as close to each other as you want.
  • Sprinkle more salt on the top of the crackers before sticking them in the oven.
  • With the oven at 450, stick them in! I can’t really tell you how long to bake them for, but I usually leave each batch in for 4-7 minutes. You will know its done when the ends or tops begin to turn a little brown. But even if they aren’t brown, the cracker is still really good. So really it is trial and error and up to your preferred taste.

That’s it! Super easy, super fast to make, and VERY cost saving. You can play around with different flavours too. I’ve tried plain, mustard, jalapeno cheddar. Just have fun with it.
